This morning, you'll step into the kitchen for an intimate hands-on cookery workshop, where you'll learn to prepare a traditional three-course Maltese lunch using fresh, seasonal ingredients. Guided by local expertise, you'll discover the techniques, flavours and stories that define Maltese home cooking before sitting down to enjoy the meal you've created, accompanied by carefully selected local wines.

As the golden light begins to fade, we'll take a traditional passiġġata through the historic streets of Birgu, one of Malta's oldest fortified cities. Rich in maritime history and tales of siege, Birgu offers a captivating glimpse into the island's past. Along the way, there will be time to pause at a local wine bar for an aperitif or light bite before experiencing one of Malta's oldest culinary traditions.
Late in the evening, we'll visit a family-run bakery as preparations begin for the following day's baking. Watch as skilled bakers handcraft Malta's iconic crusty loaves using time-honoured techniques before taking freshly baked bread back to the hotel to enjoy at breakfast the next morning.

After breakfast, we travel into the countryside to visit an award-winning artisan cheesemaker dedicated to preserving traditional methods while embracing exceptional quality.
Here you'll take part in a hands-on cheesemaking experience, learning how fresh milk from locally reared Maltese sheep and goats is transformed into beautifully balanced cheeses and yoghurts using natural fermentation and live cultures. Inspired by the cheesemaking traditions of medieval European monasteries, every product is crafted without artificial additives, herbs or flavourings, allowing the purity of the milk to shine through.
The dairy sources its milk exclusively from neighbouring farms located within a kilometre of the creamery, ensuring exceptional freshness while supporting local farming families.
Your efforts will be rewarded with a guided tasting of handcrafted cheeses, thoughtfully paired with a selection of Maltese wines.
Later, we journey to Valletta, Malta's magnificent UNESCO World Heritage capital. Founded by the Knights of St John in 1566, this remarkable city is a living museum where elegant Baroque architecture, imposing fortifications and panoramic harbours tell the story of one of Europe's most fascinating island nations.

For those wishing to delve deeper into Malta's artistic heritage, we can arrange entry to St John's Co-Cathedral. Behind its remarkably understated limestone façade lies one of Europe's most spectacular Baroque interiors, adorned with richly inlaid marble tombs and Caravaggio's celebrated masterpiece, The Beheading of Saint John the Baptist.
This evening, we return to the your accommodation for a memorable farewell celebration inspired by the banquets of the Knights of St John.

Our first visit is to the apiary of Professor David Mifsud, Head of the Department of Rural Sciences and Food Systems at the University of Malta. Here you'll gain a fascinating insight into Malta's ancient beekeeping heritage and discover why the island's name is believed by many to have been inspired by its renowned honey production. Surrounded by native flora, you'll learn how generations of beekeepers have worked in harmony with the landscape to produce distinctive honeys unique to the Maltese Islands.
Our final destination is one of Malta's most acclaimed boutique wineries—a vineyard born from passion, patience and a vision to create world-class wines with exceptional ageing potential.
Established in 2002, the estate spans four hectares and is home to more than 15,000 carefully selected vines, interspersed with olive, fig and carob trees alongside indigenous Maltese flora. Every aspect of the vineyard has been designed to express the unique character of Malta's limestone terroir.
What began as a small garage winery has evolved into an elegant estate overlooking the vineyards, framed by breathtaking views of the medieval city of Mdina, the Grand Master's summer residence, the Inquisitor's palace and the iconic Laferla Cross.
